Okay, I went a little too light on the pectin. However, the ginger-lemon-berry marmalade tastes a-ma-zing. So. who cares if it runs off your toast a little.
Since it is a bit more like syrup, thinking maybe it would be good over yogurt/ice cream/etc. A couple of tablespoons might also add a nice zing to a pitcher of sangria. Mnnnn. I will find a use for this stuff!
